It's going to be another scorcher today so this stove-top meal should keep the kitchen cool. And to keep the sodium down a bit I use the lower salt terriyaki sauce. It's not *that* much lower, but every little bit helps.

Tofu and String Beans Teriyaki

Amount Measure Ingredient -- Preparation Method-------- ------------ -------------------------------- 1 pound tofu, extra firm -- cut in approx 1 in wide and 1/2 in thick slices 1 pound String Beans -- snapped 4 cloves garlic -- minced (or to taste) 6 ounces Teriyaki Sauce -- or more if needed 1 package buckwheat soba noodles

 

In a frying pan, put your olive oil (water for McDougall and other fatfree plans) and tofu. Brown your tofu. Whilst your tofu is browning, puton a pot of boiling water. When it boils, throw in your string beans andnoodles for 5 minutes (how convenient, they both take 5 minutes!). Whendone, strain, rinse with cold water and set aside.

 

When your tofu is brown, take it out of the pan and set it aside. Put inyour garlic and brown for a minute. Then throw in your string beans andnoodles and stir fry for a few minutes. Add back the tofu and coateverything with a nice glaze of teriyaki sauce. Cook until it all thickensslightly, about 2 minutes.

NOTES : (All notes and directions by the author) This recipe came about because I had a pound of string beans that had to be used! String beans can be bland, so I thought the teriyaki sauce would really jazz them up. I was right! I love this recipe because it is quick and doesn't require many ingredients. I also love it because it's similar to Chinese food takeout (only much healthier!). It's a real crowd pleaser and even non-vegans will love it.Nutr. Assoc. : 1497 0 0 0 0 1384
