It is fat free if you omit the avocado. I would think that it would also be nice with snowpeas. Stef CALIFORNIA RICE SALAD 4 servings 2 cups cooked rice (I use brown rice) 2 Tbsp lime juice 3 Tbsp lite soy sauce 1 Tbsp water 2 Tbsp sugar or equivalant sugar replacement 1/4 tsp ground ginger (can use fresh ginger) 2 minced garlic cloves 1/2 tsp hot chili flakes 1/2 english cucumber (sliced into thin 1/2 moons) 2 green onions thinly sliced 1 avocado diced Mix together lime juice, soy sauce, water, sugar, ginger, garlic, and chili flakes. This makes the dressing. Combine rice, cucumbers and onions in bowl and toss with the dressing. You can refrigerate the salad like this. Add avocado before serving.
