Guest guest Posted June 2, 2008 Report Share Posted June 2, 2008 Just made a great salad I thought I'd share - I was missing the old mayonnaise laden eggy potato salad I used to make, and this one, while very different, actually hit the spot. It's super simple, so don't laugh at me for posting a " recipe " a 5 year old could make. Potato Arichoke Salad 6 Potatoes, boiled then peeled & cubed 6-12 marinated artichokes (since this is fat free group - make sure the marinade is water based) cut into 1/2 inch pieces 2 tablespoons (to taste) sweet pickle relish 1/2 tablespoon (to taste) sweet hot mustard or mustard of your choice. Toss together and chill. Salt & pepper to taste (or don't.) I boil my potatoes until they're quite soft, but if they had been dryer, I might have added a little fat-free italian dressing or some of the artichoke marinade to help in the mixing.
