Serene, As someone else who is " almost " no added fat (though about 99.9% vegan), I must say that I appreciate the " feast " -- it tastes good, but I eat far less of it, and it's so rich that I don't want it again for a very, very long time. I enjoy reading your menus in your " experiment " , though I must confess some envy--I used to live in California and would have been feasting on watermelon and mangos at this time if we hadn't made the move to New England (which very well may not last...I hope). On a positive note, I have germinated several dozen (I plan on giving away what I lack space for) Thai Violet Prince eggplants [ http://evergreenseeds.com/eghyvipr.html ], so this summer I am going to be making recipe after recipe from SusanV's blog that call for adorable little eggplants. (Last year for my birthday, I made myself the stuffed eggplants with lentils and the un-dirty rice, but I did it with my home-grown smallish white Chinese eggplants, since I couldn't get ahold of the darling babies). Susan, you're the primary reason I am growing these plants--the ripple effect is in place! Now that's what I like to hear--people eating more eggplant! :-) I'm growing Japanese eggplants again this year, since they did well in my garden last year.
