Guest guest Posted April 17, 2008 Report Share Posted April 17, 2008 Rainbow Potato Salad Mix together the following and serve: Any combination of (cooked, cubed): White-fleshed potatoes Purple potatoes Sweet potatoes Carrots (sliced in thick circles, not cubed -- cubing a carrot is a pain in the ass. :-) Chopped bell peppers, any colors Chopped onion (or green onion) to taste Tofu-lime mayo (recipe follows) or other fat-free vegan mayo, enough to moisten Salt and pepper to taste Tofu Lime Mayo 16 oz. silken tofu, the firmer the better 3 Tbsp. fresh lime juice (the juice of 3 small limes, approximately) 1 tsp. garlic powder 1 tsp. salt 1 tsp. yellow prepared mustard 1/4 tsp.
