100% compliance so far, because I keep reminding myself that this is an

experiment, and I won't know if the experiment works unless I do it all

the way. Pretty cool.

Day 2, Sunday, 4/13/08

Blood pressure: Meter is definitely broken. Have to get a new one.

Pulse: 72

Took thyroid meds?: Yes

Other meds: Took two aspirins last night after posting my journal,

because I had a bit of a headache, and two this afternoon for what I

think is sinus pain (the weather's been weird lately); one iron pill

Walk miles: 1.8

Symptoms: Some toe pain last night and today (mild, in my left big toe);

oily skin; mild headache upon waking; also, I didn't think to mention it

yesterday, but I had joint stiffness all day yesterday (I probably

didn't mention it because it's pretty common for me these days); it's

milder today. Sinus pain (I assume) in the afternoon. And I don't want

to be indelicate, but things are running rather smoothly than usual today.

Planned food:

B: Oatmeal; piece of fruit

L: Sweet potatoes, salad

D: Seitan Italian sausage, spaghetti, broccoli, salad

S: Fruit, cut-up veggies, leftover chana dal (1/2 - 1 cup)

Actual food:

B: Oatmeal (plain); tangelo (also, ate one of James's strawberries

before bed last night)

L: Sweet potatoes, salad (mixed greens, roasted tomatoes, raw sliced

mushrooms, roasted-garlic vinaigrette (recipe below))

D: Seitan Italian sausage

; spaghetti (sauce recipe below), broccoli, purple asparagus

S: banana, carrot, leftovers from dinner

Roasted Garlic Vinaigrette

2 T mashed roasted garlic

2 T balsamic vinegar

2 T mustard, any kind

1/4 cup water, or as much as you need for the consistency you like

salt and pepper to taste (optional -- I usually leave it out)

Mix it all together and pour it on salad. :-)

Easy Mushroom Spaghetti Sauce

1 can (15 oz) diced tomatoes, with the juice

8 oz. mushrooms, sliced

1 Tablespoon granulated garlic

Heat on medium until the mushrooms are cooked and the sauce is as thick

as you want it. Serve.
