What I'd like to do is make a loaf that is fat-free, completely whole wheat with onions in it. I don't mind if it's a bit heavy. i can't find an exact recipe and don't have the experience yet to adapt another recipe. if I have a recipe that is half whole and half white flour, can I just change it to all whole wheat? or, if I have a whole wheat loaf, can I just put a bit less flour in and add in some onions at the beep? I have bought some stuff called dough improver, which I think will help the whole wheat loaf rise better. It does make the bread heavy and dense and often it will not rise nearly as high. What I do is replace all but about a 1/2 cup of the white flour with wheat flour.
