Whole Wheat Onion Bread.

Hi, i make bread in my machine about once a week, but have only ever made from

pre-mixed

packets. What I'd like to do is make a loaf that is fat-free, completely whole

wheat with

onions in it. I don't mind if it's a bit heavy. i can't find an exact recipe

and don't

have the experience yet to adapt another recipe. if I have a recipe that is

half whole

and half white flour, can I just change it to all whole wheat? or, if I have a

whole

wheat loaf, can I just put a bit less flour in and add in some onions at the

beep? I have

bought some stuff called dough improver, which I think will help the whole wheat

loaf rise

better.

Would be very grateful if anyone can offer any advice.

You can replace the white flour in a recipe with whole wheat flour. It does make the bread heavy and dense and often it will not rise nearly as high. What I do is replace all but about a 1/2 cup of the white flour with wheat flour. Then use a 1/2 cup soy or high gluten flour, available at health food stores and most grocery stores. the bread will rise higher, be lighter in testure and moister, less apt to crumble up.
