I have used Quinoa only a few times myself being a recent entry to the vegan and health food world. I bought some just the other day in a packet at the health food shop - the first time I bought it was from a food co-op with no recipe advice or packaging whatsoever! - and the information says you can replace it for rice, use it for dessert, breakfast in place of oats, stuff vegies with it, etc. When looking at quinoa which is also a high protein source I just cook it in water and substitute it for rice or pasta or whatever and use my imagination...I have a well loved recipe I have just added quinoa to theoretically for you lovely vegans! Quinoa Stuffed Mushrooms serves four, but then that's impossible because they are so edible especially on an empty stomach! 1 cup organic quinoa 2 cups H2o -plus a tablespoon to fry with 4-6 Big Mushrooms - drool! - chop off and dice stems 1 medium block tofu, diced 1 medium onion, diced 1 zucchini, diced 2 tablespoons nuttelex or other butter substitute 1 can organic diced tomatoes - or buy / pick them fresh! 2 cloves garlic, crushed 1 jar of salsa or equiv self made mixture soy cheese melty style, grated or chopped 1 cup veg stock - the good stuff in whatever brand you can find universally it is different - they are just brandnames! or use a homemade one that is ready to cook with, again the universal time spent cooking factor! Preheat oven to medium hot. Cook quinoa with the H20, boiling it in a saucepan for about 5 mins then down to medium heat for ten mins. Whilst quinoa is on the stove, splat the nuttelex with a tablespoon of H20, into a medium hot frying pan then add the onion. Then add tofu until just beginning to cook. Add zucchini then when half cooked add mushroom stalk pieces and tomatoes. Make it so they still have a little time to cook in the oven, or however you like it! Take pan off the heat and stir in quinoa. Pour vegie stock into oven dish, or dishes, and place mushrooms in the liquid. Spoon mixture on top of shrooms and add grated soycheese, salsa and garlic. Pop into oven for about 20mins. Pop out of oven and into mouth!! Joy to the mushroom makers! Must be faerie land given! Mega energy dose and great for kids and anyone!
