I don't know waht the " unknown ingredients " are so don't pay too much attention to the nutritional info except what the lady added to the title. * Exported from MasterCook * Broiled Millet Polenta Patties - 1 pts, 13g carbs, 2g fiber Recipe By :Enemy of the Steak by Nikki Goldbeck, Square One Publishers, 2007 Serving Size : 12 Preparation Time :0:00 Categories : LowCal (Less than 300 calories LowerCarbs LowFat (Less than 10%) Vegan WW Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups water 1 cup millet 1/2 teaspoon salt 1/2 cup shredded zucchini 1/2 cup shredded carrots salt freshly ground black pepper Bring the water to a boil in a medium-size saucepan. Stir in the millet and salt. Then reduce the heat to a simmer, cover, and cook over low heat for 20 minutes. Uncover the saucepan and continue to cook, stirring frequently, for about 10 minutes, or until the millet becomes quite thick and has as soft, creamy texture. Remove the saucepan from the heat, and stir in the shredded vegetables. Season to taste with salt and freshly ground pepper. Wipe a large baking sheet with olive or canola oil. Preheat the broiler. Using 1/3 cup of polenta at a time, shape the mixture into patties and arrange on the oiled baking sheet. Place 4 to 6 inches below the heat source in the preheated broiler, and cook for about 5 minutes on each side, or until lightly browned. If you prepare the patties in batches, wrap the cooked patties in a clean cloth napkin or dish towel t keep them warm. If reheating is necessary, return to the pan briefly before serving.
