I thought you might enjoy this whole wheat muffin recipe I converted to a vegan recipe this morning. This recipe is very adaptable so you can play with it and find something you enjoy. 2 1/4 cups whole wheat pastry flour 1 tsp baking powder 1/2 tsp baking soda 1 tsp salt 1 cup almond milk 2 bananas 1/2 cup apple sauce 1/2 cup honey 1/2 cup dried fruit ( I used blueberries and cherries) 1/2 cup chopped nuts (these are optional but my husband likes nuts) Mix dry ingredients add wet ingredients and combine. Fold in fruit and nuts. Bake in greased muffin tins at 400 degrees for 20 to 25 minutes or until golden brown. This made 12 muffins for me.
