The inspiration was from Whole Foods where I copied down the list of ingredients from the salad bar featuring a similar salad. I started with about 1 c. quinoa, and cooked til just tender (not mushy), then added about 4 chopped scallions, green tops included, along with the grated zest of two oranges and juice of these two, plus the sections of two more oranges. Then add in about 1/3 of a diced sweet red pepper. Add a light touch of salt if you want, (I didn't) and grind of pepper. Simple but satisfying. I had some leftover quinoa in the fridge, so I adjusted the recipe accordingly and had it to go with another (green) salad for lunch today. I did add a little something - some grated ginger and a sprinkle of raisins (shoulda used craisins - they go so well with orange!) and my dh suggested that next time the tiniest sprinkle of crushed chilies heh heh heh. But we loved the idea and I'll think of cooking extra quinoa in future just for this salad. Btw, I used red quinoa - cuz that's what was cooked - and it looked very exotic.
