Actually for the Mac and Cheese I make a cheese sauce with margarine, flour, milk, and when that gets thick I add cheese. This is not in the least vegan or fatfree. I wouldn't touch it with a ten foot pole. But the ovo/lactos love it. Of course, then it is baked until bubbly. More on topic for this list, I have heard that people who like the taste of nutritional yeast can make a Mac and Cheese that they really love. Unfortunately for me, I just can't stand the taste of nutritional yeast. I have tried it several ways and it just doesn't taste good to me. Looks like my holiday plans have finally been confirmed: there will be 11 ( YES eleven!) people here from the 24th of December until the 2nd of January. HOLY COW! To put this in perspective, it is usually just my husband and myself here. I do all the cooking. The part of this that I like is that there will be 5 of us vegetarians. I have also decided that I will be making vegetarian fare. Usually, I have to coo k omni-vore with a side of vegan but that isn't the way that it is going to work this time. On the 24th, I will do a big ham and on the 25th my husband and his eldest daughter will do a turkey, but that is IT when it comes to what I am planning "flesh-wise". So my question: I have started cooking and freezing. So far I have made Roasted vegetable and mashed potato enchladas and Mac and cheese. The first being very low-fat and the second NOT but it's an easy thing to have in the freezer, ready to defrost. This week I'm also going to make a fat-free vegan eggplant dish to freeze, There is so going to be so much garbage food here that Fat Free Vegan is what I want for the REAL food. I need ideas!
