So I went to a grocer that has a variety of Asian Produce. I heard about the Ube ( purple Yam ) and if you are not familiar with this, do a search on Goggle. I have used ubes in a variety of ways. To make a long story short I made mashed Ube yams to serve tomorrow . They are very sweet as is and so I added cinnamon, nutmeg and ( vegan margarine.) But you can used them as you would any other yam or sweet potato. One realitive is the only vegetarian guest ( not toally vegan ) in our 14 people dinner. It's a mix of all kinds of foods to please everyone So Ubes, are royal purple indeed and very sweet. I suspect people will look at these in disbelief- no food color added and they are so delicious.
