Guest guest
Hi Mary, I guess I should have waited before sending that email to the group because I don't know what I was thinking but before baking I poked all the potatoes with a fork and then laid them on my pizza stone in the oven. Well, what a mess, I'll tell you! They leaked all over everything and made a huge mess. Also, I guess I cooked em too long because they were too mushy to slice and hollow out like you do with regular potatoes. I ended up just peeling the skins off. I saved the skins and thought maybe the day after Thanksgiving, I would bake them on a cookie sheet until crunchy sprinkled with a little cumin for a nice snack. I'll be mashing the potatoes with pure maple syrup and cinnamon. Have a great day! Gina ---- threefatesfiber 11/21/2007 07:23:01 AM Re: My great sweet potato idea Hi GinaSounds like a great idea! (And it seems like the "simple" ideas arerarely discovered.) What else will you be adding to your mashed sweetpotatoes or to the potato skins?Mary> I was getting ready to peel them and boil them because I am going tomash> them and put them in a casserole dish, when I got the idea of bakingthem> whole and when done, scoop out the potato, leaving 1/4" and freezing the> skins for myself to make a healthier version of potato skins!
