Guest guest Posted November 17, 2007 Report Share Posted November 17, 2007 1 box of extra firm tofu drained and cubed 1 bottle of key lime juice ( you won't use the entire bottle- I use it as a marinade and keep a bottle on hand ) 1 onion sliced in half and then each half sliced lengthwise 1 red bell pepper sliced lengthwise in strips 1 green bell pepper sliced as above 1 large clove garlic minced 1 small yellow squash sliced into rounds 1/2 cup frozen green peas thawed some fresh basil leaves chiffonade cut salt and pepper to taste Drain tofu then place in bowl and pour over about 1/2 cup lime juice, to cover tofu. Meanwhile prepare vegetables. In a non stick skillet add a bit of vegetable oil and cook and stir vegetables except peas until they become softened and tender. Add the tofu with the lime juice and cook and gently stir mixture to heat tofu. Add the thawed peas. Season to taste with salt and pepper. If you wish add some ginger and since this is tart, one may sweeten a bit by adding some kind of sugar. Lastly stir in basil.
