Guest guest Posted November 11, 2007 Report Share Posted November 11, 2007 I make most of our bread these days, and it's usually fat-free and vegan, because that's easy and cheap with a bread machine. Tonight, I ended up with a really nice loaf. It took longer than usual to rise, but it ended up moist and sweet, and I think it's worth making again. McDougall would want more whole grains in there, and I'm going to play with that next time, but I'm giving myself permission to skip some steps while I'm home recovering. :-) Sweet nutty loaf 1 1/4 cup unsweetened soymilk 1/4 cup liquid sweetener (agave syrup, honey, etc.) 1/2 cup Kashi nuggets (or GrapeNuts) 3 cups bread flour 1 heaping teaspoon salt 1 1/2 teaspoons yeast Put ingredients in your machine according to directions on your bread machine. Set on dough cycle. When dough is done, remove and place in nonstick (or lightly greased) pan and allow to rise until just cresting the edge of the pan. Preheat oven to 350F and bake for 35 minutes. Cool on a rack.
