You might all want to get "The (Almost) No Fat Holiday Cookbook: Festive Vegetarian Recipes" by Bryanna Clark Grogan. There are some wonderful holiday ideas in there, no matter what special occiasions you celebrate. She does use honey on occasion, but always provides an alternate ingredient. For those wanting a whipped topping with no added fat, try her Whipped Soy Cream Topping found on p168. She says that the coconut extract makes it taste rich, but does not make it taste like coconut. 2/3 c reduced-fat extra-firm SILKEN tofu, crumbled 1/3 C. reduced-fat commercial rice milk, almond milk, or soymilk (plain or vanilla) 4-6 tsp light sugar or alternate sweetener 1/4 tsp coconut extract pinch of salt (optional) Place all ingredients in a blender or food processor, and blend until very smooth. Place in a covered container, and refrigerate for several hours or, preferably, overnight. She adds some variations to this, but you should really buy the book to get them :-) Makes 1 cup Per 2 Tbsp: Calories 18, protein 1gm, fat 0 gm, carbohydrates 3gm The book is not pricey, btw.
