I found that a great way to re-distribute the unused ones to (mostly) non-veg people was through my local freecycle list (go to freecycle.org). It's basically a network of list based on geographic areas where you offer what you don't want, for free. Craigslist also has an area for free stuff. When I posted my free veg cookbooks, I had several responses of interested people and most were non-veg. About a year later, I saw one of the titles reposted again to freecycle (maybe a coincidence, or maybe the same person keeping it in circulation).
