It requires 2,500 gallons of water to produce one pound of meat, according to EarthSave.org; a typical vegan diet requires only 1/12 the water to produce compared to a meat diet. If a family of four cut its meat intake by merely 10 percent, that would save more water than the 30,000 gallons a year from conservation and efficient products claimed in the article. Marc Reisner said it well in his book, "Cadillac Desert'': "The West's water crisis -- and many of its environmental problems as well -- can be summed up in a single word: livestock.''
