Hi, I am Cherie Soria, director of Living Light Culinary Arts Institute and codirector of the Living Light Center in Fort Bragg, CA.I received an email alerting me to the fact that someone in your group was interested in vegan restaurants on the Mendocino coast. An letter/article that was forwarded to me stated that we do not heat foods over 180 degrees -- actually, that would cook the food! We do not heat foods over 105 degrees, in order to maintain the integrity of the food and protect the vital phytochemicals, enzymes, antioxidants, and perhaps more important to most people, the flavor. Our raw vegan culinary center is located in the Company Store, on Coast Highway 1 (Main Street) and Redwood Street in Fort Bragg. Our school has been in business for 9 years -- we are the pioneers in the field of gourmet raw vegan cuisine. Living Light Cuisine To Go is filled with gourmet specialties like lasagna, burritos, enchiladas, pastas (with a variety of sauces), burgers with all the trimmings, mezzo meal (dolmas, humus, horiatiki salad, falafels), sandwiches, vegetable teriyaki, stuffed mushrooms, and a whole lot more. We also have fabulous (famous) desserts and of course, fresh juices, smoothies, and the best salads around. We are 99% organic and all our packing is 100% compostable. We are open from 7 am to 7 pm and have nightly dinner specials and seating in our indoor courtyard. Even though we originally created this as a "to go" deli, so many of our customers wanted to eat in our indoor courtyard, that we started serving on china for those who do not want "to go".Indeed, it is a fun place to hang out. The Living Light Marketplace offers hard-to-find kitchen accessories, equipment for the raw food kitchen, products for health and conscious living, a selection of over 100 books on vegan, raw foods, general health and permaculture. The highlight of the Living Light Center is our school. People come to Fort Bragg from all over the world to learn how to make raw vegan cuisine. I have been teaching vegetarian culinary arts for 35 years and raw vegan cuisine for 14 of those. Our classes are fun, entertaining, and empowering. Classes are anywhere for 1 day to 6 weeks in length.We invite you to come to Fort Bragg, enjoy our beautiful scenic environment, our friendly community, and our fabulous organic gourmet raw vegan cuisine.
