Almost everything in animal products can be obtained from plants. When this happens, I'm usually out leafleting and so I have a copy of Vegan Outreach's Guide to Cruelty Free Eating on me. I give them one of those and tell them there is an article about how to stay healthy in it. It's here: http://www.veganoutreach.org/advocacy/resources.html And if they really think they can't be healthy as a vegetarian, I tell them they should try to eat as little animal products as possible and buy free range. And if I mention free range I tell them they should check out the farms themselves to make sure they raise the animals in a way they think is acceptable. I hope that was somewhat helpful.
