Soy and other legumes do indeed contain estrogens, antinutrients, excitotoxins, and other profoundly health-destroying properties. However, birds have gullets, in which grains (grass seeds) seeds may sprout (germinate). They also have gizzards (not stomachs) in which the seeds may be ground up and digested. Humans have neither gizzards nor gullets. Humans also began consuming grains extremely recently in evolutionary history (not more than 10,000 years ago). These two tidbits, plus the fact that grains must be processed and cooked in order to be consumed, ought to give pause to those who consider grains to be people food.
