I was wondering if their process is vegan and below is the answer. It came in one day of my message to them. I thought folks on this list would be interested. The wine is very affordable, at (or about) $6.99, and it tastes good! I brought it to the CCV potluck last night & it was emptied! (I have no personal gain from this message!) Marcy "I have been letting the ODR ferment to dryness, then finish malo-lactic fermentation which, in theory, gets it to a point where virtually nothing microscopic can live in the wine without oxygen. Vinegar bacteria could metabolize the alcohol, but it needs oxygen, hence the wine is considered 'stable'. Since nothing can live in it, I can get away with only a 'polish filtration' which is done using cellulose pads. They are a sort of thick paper which screen out any larger chunks and make the wine clear in the glass. Many wines are sterile filtered which is a lot tighter filtration, ultimately through a plastic membrane, but I haven't needed to go to this extreme due to the wines stability. There is the risk of a few nutrients being available and a few malo-lactic bacteria there to start using them and this happens occasionally, which leads to a slightly fizzy bottle. Also when the wine is chilled/aged in cool warehouses, it can drop a light sediment which is just a cosmetic defect.
