We've been operating our website for almost five years and during that time we've learned a great deal from many, many veg*n restauranteurs and their customers, around the world. Briefly, and not surprisingly, the most important elements in establishing a successful veg*n restaurant are: 1) Know your market inside and out. 2) Get as much experience in the restaurant business, learning in at least two other restaurants, before you open yours. 3) At this point, even in very veg-friendly communities, it's highly unlikely that a veg*n restaurant will survive solely from the patronage of veg*ns. A veg*n restaurant must appeal to those who aren't necessarily veg*n - menu, service, food quality/variety and decor are all essential elements.
