I'll tell you some of my ideas, which you've pretty much captured with what you'd like to see in a place, but i'll let you in on my vision thus far... -cozy/comfortable, homey atmosphere (not modern and sterile-eek!) -wholesome/nutritious, no " fake meat " or highly processed ingredients (i'm talkin an organic vegan house ya'll!!) -BREAKFAST! (which i'm dying to do!), with longer hours and lots of fun options (waffles, pancakes, wheat free options, house made preserves and bakery fresh each day, house tofu " cream cheeze " & bagels.....) -lots of dessert options, freshly house made -hours that will extend into late night -possibly vegan beer & wine in time (we'll see if it heads in that direction) I just really want this to be a place where people can meet, and enjoy great food that is on the whole revolutionary for their bodies and for the world. A place for community, peace of mind, and nurturing of the body, and also a place to learn. In time I would love to have cooking classes hosted there, and also to open up the floor to local talents, perhaps spoken word night, or acoustic guitar, local artists can display art. Another major theme is that the business will be green, focusing on the environment as a daily practice. stress people to bring to go containers and mugs whenever possible, and offer discounts to those who do, use pollutant free soaps and cleaners, build sustainably and use recycled products. There are so many wonderful things, the sky is the limit!! these are just a few of my ideas. I'm very excited to pour my heart and soul into this endeavor, and i'm glad to know there are people out there like you who will support me! I'm at square one starting off with this and the whole business running world, so any help is appreciated. Too often there is a disconnect between eating practices and concern for the environment (in both directions). I am also really happy to hear that fake meats won't be part of the menu. There's plenty of that elsewhere, and we need to show the world that we can enjoy healthy plant-based foods without acting like we miss meat by eating things that look, act and taste like meat. Organic vegan- it doesn't get much better than that! I can help if you need recycling info, or green restaurant info. City of Berkeley has a green restaurant program and even picks up compostables, such as ALL food, cardboard & paper products. With your plan, you can have minimal trash heading for the landfill. " Yes, fake meat is by nature, processed food. And yes, some people are of the opinion that fake meat sends the wrong message. However, fake meat has enabled myself and *many* others to make the transition from a meat and potatoes upbringing to a healthy vegan way of life. Bottom line: fake meat is good for the veg*n movement! -Josh PS. I wouldn't say there was " plenty of [fake meat] elsewhere " especially when it comes to " American food " .
