Condensed Soy Milk or Rice Milk

Put 3 cups of soy milk or rice milk in a saucepan. Add 1/2 cup

sugar. Cook over medium-low heat, stirring constantly, until the

volume is reduced to 1 cup. Add vanilla to taste and a pinch of

salt. Cool. Store in a jar in the refrigerator.

 

Evaporated Soy Milk

Follow the directions above, leaving out the sugar and cooking

until the volume is reduced to 1 1/2 cups.
