Guest guest Posted September 6, 2004 Report Share Posted September 6, 2004 Hi Linda, Kefir starter contains only a few types of bacteria, and there is no guaranty that it is alive or able to ferment raw (or non-homogenized) milk, while kefir made with kefir grains contains about 20 different types of alive bacteria. I am not sure what quality of fermented coconut milk you are getting, but I tried to ferment milk with the starter (from bodyecologydiet.com), followed the instruction and got spoiled stinky stuff. This is from rejoiceinlife.com link: You are advised to read widely on the topic of both traditional and modern methods of fermentation. Start at the beginning and master the art of grain, vegetable and dairy ferments before experimenting with olives, meat and fish. Substrates that have a high oil content such as nuts, peanuts, olives and coconut may provide a suitable environment for fungi that produce carcinogens (aflatoxins).
