Hi Viola,

Can you tell me the difference between kefir starter and kefir grains? Why

is the starter junk?

I find the fresh young coconut (blended meat with water) made into kefir--

delicious!

Thanks, Linda

Hi Linda,

Kefir starter contains only a few types of bacteria, and there is no guaranty

that it is alive or able to ferment raw (or non-homogenized) milk, while kefir

made with kefir grains contains about 20 different types of alive bacteria. I am

not sure what quality of fermented coconut milk you are getting, but I tried to

ferment milk with the starter (from bodyecologydiet.com), followed the

instruction and got spoiled stinky stuff.

This is from rejoiceinlife.com link:

You are advised to read widely on the topic of both traditional and modern

methods of fermentation. Start at the beginning and master the art of grain,

vegetable and dairy ferments before experimenting with olives, meat and fish.

Substrates that have a high oil content such as nuts, peanuts, olives and

coconut may provide a suitable environment for fungi that produce carcinogens

(aflatoxins).

And here is from Dom's links:

Similarly to yogurt cultures, commercial kefir starter-cultures simply lack the

ability to culture unpasteurized raw milk.

Coconut-milk could cause problems with possible contamination or pathogens being

cultured.

Thanks,
