Next Special Dinner at Chaco Canyon -- Friday July 9th

Hello Everyone,

 

It's HOT out and summer is in full swing. Here at Chaco, things are humming

along nicely as we glide into our 11th month of existence -- a huge thank

you to everyone for all your kind support!

 

Our next dinner is only a couple weeks away, so reserve early to ensure a

table! The first bounty of the summer harvest will be highlighted: heirloom

tomatoes, basil, zucchini, cherries, corn, green beans and many others.

Here is the preliminary menu:

 

Appetizer

Green Beans pickled in Lemon Juice, Carrots, and Cucumbers tossed with a

Creamy Pumpkin Seed Dressing and Garnished with Peppered Almonds.

 

First Course

Corn chips made with Fresh Corn and Flax Seeds, served with Red

Pepper-Heirloom Tomato Salsa and Lime Guacamole.

 

OR

 

A pate of Peas, Zucchini, Carrots, Pumpkin Seeds, Walnuts and Garlic, served

with a Peach-Date Chutney and Garam Masala Spiced Walnuts.

 

Main Course

Five Spice “Stir-Fry”: Mixed Vegetables and Green Papaya tossed in a Five

Spice Sauce and served on Sprouted Quinoa.

 

OR

 

Zucchini Pasta with Basil Pesto topped with Garlic Greens and Pine Nuts.

 

Dessert

Cherry Tart: Cherry Filling and Fresh Cherries on a Carob-Nut Crust.

 

OR

 

Lime Cashew Sherbet served with Basil Sauce.
