Part of the article is below. Andy Hoart's physique is slim. He used to be 200 pounds in his 20s, but now nearing the age of 50, the 5-foot-9-inch man is holding a steady 145 pounds. Hoart is among a growing number of Boulderites who are following an uncooked — or raw food — lifestyle. Since 1996, Hoart has funneled his philosophies into his NHU Foods, a wholesaler of uncooked and unpasteurized foods. With about 100 different products, NHU specializes in nut and seed " meals, " where fruit or vegetables are blended with nuts or seeds.
