I certainly do not know the facts regarding the amount of digestive juices we produce and use, but a couple things occur to me. Foods in their natural state (raw), to me, logically would require less. Also, our body recycles things (like B12), so even if it were to produce 2 gallons of digestive juices, it would likely be later reabsorbing whatever it can, at least the liquid aspect (water), so we would not have to drink that much. I do take things at talks like this with grains of salt (natural, raw, sea salt). I realize that there are lots of contradicting thoughts and advice from nutritionists. As Victoria said, listen to your own body. I have been listening to my own body and my intuition for decades.
