(Those of you who enjoyed by falafel this weekend know why.) the key is: AIR! Do not try to sprout garbanzos in a jar. Sprout them in a collander. Rinsing isn't even necessary until right before you are about to use them as long as they stay moist. Instead stir them w/ your hands to give them air once or twice a day. Do rinse them very well before using as they excrete a lot of uric acid which gives food a 'sprouty' taste if not well-rised away.
