Spinach Party Puffs

Looking for a fun dish to bring to your New Year celebration? These Spinach Puffs will surely be a party favorite. Mouth-watering spinach is sautéed to absorb the succulent flavors of onions and garlic blended with soymilk for a creamy filling. Baked into puff pastry, this spinach is transformed into delicious bite-sized treats that everyone will leave everyone craving more!

Ingredients:

1 box frozen chopped spinach1 onion chopped1 tsp. saltfresh ground black pepper1-2 cloves garlic, crushed1 Tbs. flour3/4 cup plain soymilkolive oil for sautéing1 box puff pastryDirections:

 

In a medium skillet sauté onions until they start to brown. Add thawed spinach, salt and pepper and garlic; stir for a minute. Add flour and mix so that it coats all the mixture Add soymilk and stir until it thickens (1-2 minutes); once thick, set aside to cool. Roll out puff pastry into a 1/4" thick rectangle. Using a pizza slicer, cut into squares. Put cooled filling into the center of each square and fold into shapes. Bake at 400° for 30 minutes.

Go Veg to Shed Excess Pounds

Doctors suggest a new approach to weight loss based on a recent study showing that cutting meat from the diet is an effective way to shed unwanted pounds. The weight-loss study, published in The American Journal of Medicine, revealed that a low-fat, plant-based diet is more effective at helping women lose weight and improve insulin sensitivity than an omnivorous diet.

Study participants followed a pure vegetarian diet and enjoyed unlimited servings of fruits, vegetables, whole grains, and other healthful foods that enabled them to lose weight without feeling hungry. "Anyone who wants to make healthy changes in the New Year will do well to try a plant-based diet," suggests Dr. Neal Barnard, the study’s lead author.Other scientific studies support the obesity-fighting power of plant-based diets. In a recent study of more than 55,000 Swedish women, Tufts University researchers found that 40 percent of meat-eaters were overweight or obese compared to 25 to 29 percent of vegetarians and vegans. Worldwide, vegetarian populations experience lower rates of heart disease, diabetes, and high blood pressure.
