Guest guest Posted October 21, 2002 Report Share Posted October 21, 2002 Hello all, Yes, my pumpkin pie recipe has changed slightly. I made it yesterday with cashew cream topping. (cashews, coconut water, vanilla and dates or honey) I used Hazelnut " flour " from the hazelnut people at the farmer's market. they claim it is raw. The flour makes a very tight crust when moistened with water (I tried coco water-- YUM) and sweetened with whatever you prefer. It's a pretty intense flavor, but packs down beautifully in a pie pan. The ingredients of the pie are the same, but the procedure differed. I placed the chunks of pumpkin, coco meat, soaked cashews, dates in the Vitamix, using enough coco water to allow it to turn. IMPORTANT: One small pumpkin will make TWO pies. the Vitamix will not turn it ALL over at once. You will need to do it in two batches. Place SOME Pumpkin chunks in, and SOME water, adding more of each as they get blended. Blend WELL, until creamy smooth. If not blending well, take out some and let the blender do it's thing.
