Corn-Apple Cakes (gluten-free)

Amount Measure Ingredient -- Preparation Method

1 cup cornmeal

1/2 cup garbanzo flour -- * see note

1 cup apple -- grated

1 cup apple juice

1 tablespoon honey

1 tablespoon applesauce

1 teaspoon cinnamon

 

Combine dry ingredients. Combine wet ingredients. Mix together, stirring

well. Cook on a non-stick griddle. Turn when bubbles form on top and edges

begin to dry.

Jan Tz's Sweet Corn Cake

Amount Measure Ingredient -- Preparation Method

1 cup yellow cornmeal

2 Tbs. sugar

1/2 tsp. salt

1/2 Tbs. baking powder

1 small can chopped green chiles

1/4 cup water

15 ounces creamed corn -- canned

 

1. Pre-heat oven to 350 F. Grease or spray a 9 x 5 loaf pan.

 

2. Mix the dry ingredients together first, then stir in the rest. Mix

quickly and do not overmix.

 

3. Pour into the loaf pan. Bake uncovered for 40-45 min. or until liquid has

been absorbed.

 

Chi Chi's says to use an ice cream scoop to serve sweet con cake as a side

dish or for dessert. I'd go for the side dish, or main dish, with tortillas

and beans on the plate.

Vegan

1 cup cornmeal, whole-grain -- self-rising

1/2 cup flour

1/4 cup soy milk

1 can creamed corn

 

Bake at 400° for 30 min until browned. I (LoriM) bake mine in a 9 " cast iron

skillet sprayed lightly with Pam.

NOTES : Chef Deb (Deborah Madison) on VegSource says if you can't find

self-rising cornmeal, then for every cup of self-rising cornmeal substitute

one cup regular, plus 1.5 tsp. of baking soda and a pinch of salt.

 

Sue's note: The author never specified what size can of creamed corn, so

experiment. For me, the small (6 oz?) can was too little, the 15 ounce a bit

too moist.

I'm also interested in this question.

The whole issue of raw grains has challenged me - I have loved all the

cooked ones - rice, amaranth, other wheat varieties, quinoa, corn,

barley, etc.etc., but on a raw diet I only know about steel-cut oats (or

oat groats) and buckwheat. So this would indeed be

helpful.
