Buckwheat is in a class of its own because it has a shell and can be planted, but can also be soaked wihout the shell for sprouting and eating. You can use buckwheat with the shell for planting in soil to produce Buckwheat greens. You can also soak hulled buckwheat groats for 1/2 an hour, then sprout for 24-48 hours for using in your favorite dehydrated recipes like cereal, pizza crust, grain crips, and crackers. Buckwheat is a popular choice among raw vegans who want the crunch of crackers without gluten. My suggestion to you is that you buy many grains, nuts, and buckwheat in bulk and use them in a variety of ways. Experiment and explore all the possibilities. I know that many enjoy dehydrating the sprouted (hulled) buckwheat groats, then mixing them with other grains and spices for cereal.
