I have been leaning toward raw foods from a healthy diet of whole grains, nuts, seeds, legumes, veggies, fruits etc... It all started when I removed all sugar and glucose producing foods from my diet a few years ago. I did it because I was concerned about how I felt. I felt like I was dying little by little. Smoking sometimes, drinking liquor sometimes, eating healthy once in awhile and thinking a glass of orange juice in the morning would fix me up after the pizza and beer the night before... My behavior was very typical and socially acceptable. But I was gaining weight and I suspected I was putting my heart in danger. The doctor told me I was healthy, but I was not convinced based on the way I felt. At first I simply tried to eat much better food on a regular basis, cutting out the obvious bad stuff. Then a friend gave me a book which outlined exactly what foods where healthy, and how to eat for your heart and blood to avoid heart disease and diabetes. So I followed a strict diet that did not include alcohol, sugar, dairy, animal products, or refined flour products. It also limited my intake of sugary fruits, juices, and starchy root vegetables. It was quite a revelation! Then, I discovered how little food has to be cooked in order to be enjoyed. I always noticed how great I felt after consuming leafy greens and raw vegetables. I did not get that sleepy run down feeling like I did from eating a cooked meal. Since then, it has been one eye opener after another leading to many raw food recipes. Here is my latest recipe. RAW Rainbow Salad Mince up a big handful of fresh cilantro or parsley. Take a bunch of spinach or any hearty green and slice that up too. Place in a large bowl. Add chopped avocado (2), raw corn off the cob (2 cobs), sprouted beans of choice (1 cup), 1-2 cups chopped cherry tomatoes, 1/2 red bell pepper sliced thin and chopped, 1/2 zucchini sliced thinly with a vegetable peeler. Add smaller amounts of the following: some chopped purple cabbage, chopped up thin slices of yellow beet, Pomegranate seeds, 2 Tbs. chopped dried pineapple (optional), 1/4 cup minced strawberries (optional), 1 tbs. minced olives (optional), 1 minced Jalapeño (no seeds), 1 tsp. finely minced ginger, 1tbs. minced garlic. Top with about a half cup fresh olive oil, juice of a lime, some sea salt, and ground pepper. Toss and serve fresh! (Ginger and lime may need to be adjusted for taste. I use a lot.
