Peace,

I had an experience this morning where I cut open a young coconut and

there was no coconut flesh inside and the coconut water had a strong

pinkish color to it. Was there something wrong with this coconut? I

hadn't had that experience before. Was it unripened? For any persons

that have a stronger knowledge base on young cocnuts can assist.

I've had coconuts do that, too. I don't know what it means, but i think that if it tastes good, drink it. But maybe I'm wrong... Occasionally, I've found young coconuts with little or no flesh inside, but this doesn't inherently mean there's anything wrong with it. The younger the coconut, the less flesh and the more water it will contain. I prefer coconuts that are somewhere in the middle, having an ample amount of water (1.5 cups or more) and reasonably thick flesh, but somewhat gelatinous so it's not too hard to remove from the shell or digest. The more gelatinous and less thick it is, the more sugar it contains and the less fatty. Since our bodies run on simple sugar, the youngest possible coconuts are ideal in contrast to those with thicker flesh and little or no water.
