I won't have time to "eat" but think a blended soup might be perfect. Just thought I would ask for help on ideas of what to pack. I'm trying to go 100% now but since I like to make things fresh, I'm already taking a lot of time in the morning for my food. Is it OK to make a blended soup at night? Are there ideas for easier foods to blend/ways to compensate for heavy greens since I'm still waiting on my Vitamix? I have a REALLY cheap blender right now. I have a juicer too but I read that juices should be consumed immediately. But I could add juices to my blended soups. I just don't want to pick up cooked food for lack of time/preparation. Oh, I'm not a fruitarian, so I like my greens in my meals in the evening!! Any recipe hints would help too........I have my mind full today! Thanks everyone! Gazpacho This summer dish is satisfying and light. Blend the following ingredients in a blender until smooth: 1/2 cup water 1/4 cup extra virgin olive oil 5 large ripe tomatoes (preferably heirloom organic) 1 medium red bell pepper 2 cloves garlic or spicy pepper to taste 4-5 pitted dates 1/4 cup lemon juice 1 bunch of fresh basil 1/2 teaspoon sea salt (optional) Pour the gazpacho liquid into a bowl and cut the following vegetables into 1/2 inch cubes: 1 large avocado 1 medium bell pepper 5 sticks celery Add the chopped veggies to the liquid.
