Contrary to popular belief, its theobromine and caffeine are inactive until the bean is cooked. When raw, these chemicals are completely neutral. This explains why I've never experienced a headache after consuming a large amount of cacao in a smoothie or other dessert. I've only suffered headaches or stomach aches from eating traditional cooked chocolate, ie. Hershey's, M & M Mars & other popular candy companies' products. I enjoy using cacao most often in fruit smoothies, comprised of 6 medium organic bananas, 4 organic dates & sometimes an organic apple, 3 sun-dried (albeit conventional) Greek figs and/or 2 Tb of raw organic mesquite powder. I typically use 1/4 cup cacao nibs, but 2 Tb works just as well. You can use it in any dessert recipe where you'd otherwise use raw carob & it literally tastes at least as good as the junk food you may have enjoyed on Halloween in the past.
