Simple Chopped Salad of Mango, Jicama, Sun Dried Tomatoes and Sweet Dijon Vinaigrette 1 head young romaine lettuce chopped1/2 c fresh mango, cubed1/2 c jicama cubed1 c sun dried tomatoes, rehydrated and chopped1/4 c red onion sliced thin3 T -1/4 c Dijon vinaigrettedrizzle of olive oilpinch of sea saltfreshly cracked pepper In mixing bowl add all ingredients and toss gently, evenly distributing the dressing. Serve immediately on a chilled plate. Sweet Dijon Vinaigrette 3/4 c prepared Dijon (if using fresh, use a bit less)1 c olive oil1/2 c agave nectar2 T ginger zest4 garlic cloves zest1/4 c apple cider vinegar3 T shoyu1/4 c waterT sea salt In mixing bowl whisk all ingredients together well until smooth, depending on the mustard used, you may want to add a bit more sweetener.
