Guest guest Posted November 21, 2003 Report Share Posted November 21, 2003 Creamy Tomato Basil Bisque This warm and spicy soup is a favorite on chilly days. 1 cup of cashews, soaked 2 cups ripe tomatoes ½ cup sun-dried tomatoes 2 stalks celery ½ cup fresh basil 2 tsp. dries basil 3 tablespoons extra virgin olive oil 1-2 cups water 2 tablespoons Agave Syrup Herbamare Cayenne pepper or Habanero Combine all ingredients in blender (a vitamix blender will warm the soup for you) on puree till smooth. Add water until desired consistency is reached. Garnish with shredded of basil (gives nice Italian essence) or cilantro (gives a nice tex-mex flavor) For chunky soups add diced tomato and/or chopped Portobello mushrooms (very meaty tasting!)
