Thanks Peter... i haven't had any almonds yet though. I am thinking i just

got a bug and really i am pretty thankful... because *if* i detox i can just

blame it on this bug!! Makes it easier for all involved. It's weird, my head

and throat feel funky today but my body feels great!

This does bring up a question i have though....

I bought a book called " Living Cuisine -- the art and spirit of raw foods "

It's by Renee(with the little thingy over the second to last e) Loux

Underkoffler. So far there is lots of cool info like how to get your body to

transition smoothly and how to prepare new foods. She talks about soaking

nuts... almonds are soaked 6-12 hours then rinsed 2-3 times a day for 1-2

days. But, the recipe for almond milk says " soak for 6 hours " and that's

all. I know i am being really anal right off the bat here and either way i

go i will be doing really good... but i was just curious as to what ya'll

think.

Almonds could be a cause of your problem. Most of them are dehydrated.

If

they do not sprout you can be sure this is the case.

Nikki,

 

The trouble with nuts that they go mouldy after a couple of months or so.

That gives your nut farmer two months and a bit more to make his money.

However if he heats them up and drives out the moisture the mould never

comes and he can get the year round cask flow which is so useful

commercially. Moreover the shells come off much more easily after the

heating process takes them above 118 or so degrees. These denatured nuts

are not raw and mean a whole lot of work to digest and pumping more insulin

enzymes etc. Also you miss out on the whole point of eating them in the

first place.. I suggest you take a sample and soak them for 12 hours and

then splash them every six to eight hours for a couple of days. As soon as

you see them sprout, you have the genuine article. I never both with all

the testing by sprouting because the taste of a fresh walnut is as different

from a denatured one as chalk is from cheese.
