re: almond milk pulp

I don't strain the pulp when I make almond milk. I leave it in. I like it.

 

However, if you want a recipe for it, here's an idea ~~~ (actually, I

posted this recipe several days ago) ~~~

 

Almond Biscotti

 

2 cups almonds soaked 6 to 12 hours (I would incorporate the pulp from

almond milk into this)

1 cup pitted dates soaked 10 - 15 minutes

1 teaspoon raw almond butter

1 teaspoon non-alcohol vanilla extract

1 teaspoon cinnamon

 

Combine all ingredients in a food processor and process until it's a stiff

dough. Make thin patties and dehydrate at 108 degrees for 12 to 24 hours

(took 24 hours for mine).

 

These are really good. The original recipe is on page 430 of LIVING CUISINE.
