I ask because my husband really loves cooked eggs. -- I was referring to things like the yolk changing form HDL [good] cholesterol; to LDL (bad) cholesterol. HDL is a lubricant and LDL has the consituancy of ear wax. Notice how the yolk changes. The lysine is gone from the yolks as well as the omega 3 esential fatty acid.. Some amino acids in the white are now out of balance as trhew white add some amin acid blockers and the raw youlk neutralizes the blockers effect. When the yolk is cooked this can't happen. That's just for starters. If you buy Organic free range eggs and wash them, the problem should be non existant. In an egg mill with thousands of chickens in a confined space there may be a possibilty of some kind of contmination but would be on the OUTSIDE of the shell anyway. If it was salmonella even cooking to kill the bacteria won't help much becuse it not the bacteria that's dangerous it is the toxic leavings ]bacteria poop] that does the damage so unless opened to the air for some time so the bacteria flora flourishes and leaves lots of toxin behind, no effects would be felt. rusty - " Angelina H.
