From Living Cuisine, by Renee Loux Underkoffler. 2 cups almonds - soaked overnight 1 cup chopped dates - soaked 10 or 15 minutes drain and save the water 2 Tbsp. almond butter 1 tsp non-alcohol vanilla extract 1 tsp. cinnamon 1 tsp. almond extract (optional) pinch sea salt 30 soaked almonds, cut in half for garnish (optional) I combined all ingredients in my food processor and processed it till it was finely ground and held together. Add the date soak water as needed to assist in blending smooth. Recipe says to form into about 42 balls and press with the bottom of a glass (wiping/rinsing as needed).
