Buy at least one good raw food book for reference on this subject . You will learn alot this way . One such book I highly reccomend for beginners is , The Raw Truth By Jeremy Safron ..He wrote one of the first raw books and owned 2 world renowed restaurants . He also lectures and consults and educated people on the raw way of living . His book 2003 edition includes many of the famous recipes from his restaurant s , Celestial Arts is the publisher . It costs under 20 dollars and is not overwhelming (186 pgs) yet fully packed with valuable information . The chart you are looking for is on page 44 . He also describes the different ingredients , methods . A dehydrating chart to use as a guide is also on page 47 . I particularly like the way he writes a few sentences about each recipe in the beginning of each one describing them and the fact that so many of them are from his travels and look delicious .
