If there is a raw place in Carlsbad, I'd like to know about it! I am between 50 and 100% raw depending on the day, always 100% organic vegan. My husband has been 100% raw since this summer. Guest guest Posted January 13, 2004 Report Share Posted January 13, 2004 I actually love raw sweet potatoes and have a favorite recipe that comes from the Living Foods Lifestyle book. Below I've listed it as I prepare it, same ingredients but less cutting and smaller amount than in the book. 1 large or two medium sweet potatoes (I like garnets) 1-2 dates (depending on level of sweetness desired), that have been soaked for 4 hours, cut into strips ¼ cup date juice from soaking dates ½ teaspoon cinnamon ½ cup walnuts, soaked 8 hours Take the sweet potatoes and put them through a food processor grater or cut by hand into small pieces. Put remaining ingredients into food process or with regular blade, process lightly, then toss with sweet potato. This is a great dish for when I'm having a sugar craving and is great for getting in vitamins.
