Hi Jann: You did not refer to the post in question so I don't know what

you're talking about.

Miso or tempeh have been processed. But I use them anyway.

I use viili insted of milk and I ferment it from pasteurized milk. The

original milk is dead but the viili culture IMO is live again. I suppose you

could do the same with yogurt but I just don't find yogurt that appetizing.

Kefrir is ok but I love viili.

 

Kim Chi or saurkraut can be made properly but you have to do it yourself.

 

What do you ferment?
