Good thought Lili, but even more important than the GI is to eat SMALL PORTIONS. The body can handle a bit of fast release foods as long as it's only the amount the body requires for fuel at the moment. Any excess calls upon insulin to convert the glucose to glycogen and then your insulin side effects begin: see: http://www.mercola.com/2001/jul/14/insulin.htm Please note that the above information appears on Dr. Mercola's site, and I don't recommend his approach to diet as he is self serving and sells his own stuff, like fish oil and grass fed beef,.but this article is based on Dr. Rosedale's approach and he is one of the foremost authorities on insulin and it's metabolic effects. Please read all 4 pages carefully. For your Glycemic index here's a quick reference table: http://www.diabetesnet.com/diabetes_food_diet/glycemic_index.php rusty - " Lili " <ladyschaumburg <rawfood > Saturday, November 22, 2003 7:06 AM Re: [Raw Food] Night Shade Veggies & Vegetable Oil(Rusty) > Hi Rusty, that much I've learned the hard way...they are VERY > different.
